We often ask people if they've ever tried raw chocolate when they first visit our booth at the Halifax, Wolfville, and Kentville Farmers Markets here in Nova Scotia. We find that it's new to most of our friends and neighbors here. We offer a taste which most accept, and wait for a response. Almost always being quite positive, we then we share what we've learned with them about this 'superfood', and learn from them as well. This has all been quite an enjoyable, educational, and delicious! We've found that, once they try it, everyone loves Rawthentic Chocolate!
So the response has been, well, fun! We hope you'll try some of our raw chocolate.. It's Rawthentic Chocolate! The name comes from the urban dictionary, where Rawthentic is defined as: "Being of purest form, genuine." (Comes from "raw" and 'authentic") We liked that and figured it could be the best name to introduce as many people as possible to raw chocolate.
We hope you'll bookmark this site, as it will be chock full of raw chocolate recipes, ideas... basically all that we've learned about raw chocolate, and hopefully you'll end up loving it as much as we do! Here's a bit about raw chocolate, how we got to be passionate about it, and hopefully some encouragement to enjoy this healthy chocolate!
Why Raw?
We love all chocolate, but have learned that the processing at very high temperatures can take away health benefits, and in some cases even be toxic to the system. We also learned that allergies to chocolate are sometimes due to the processing, not the Cacao bean [pronounced Kuh-Kow], and that it's basically a veggie! If kept in it's natural state, it's being described as a 'superfood' by a growing number of 're-discovorers' of this bean that grows in warm regions of our planet. The Theobroma cacao tree (or as we like to say, "The Chocolate Tree") produces a bean that's very high in antioxidants... and it is sometimes referred to as "food of the Gods."
Why Chocolate?
Believe it or not, we actually find people who do not like chocolate. If you don't like chocolate, at least give the cacao bean a fair trial. Most chocolate is heavily processed with lots of dairy and sugar. There is an alternative! Rawthentic Chocolate is quite different the chocolate you find at the corner store. You might fall back in love with chocolate!
It's said that 99% of people actually love chocolate, and once you try rawthentic chocolate, we think you'll love it even more.
We do understand, and here is our case for you trying raw chocolate the next time you see it. It's readily available online, and sometimes you'll find it in health food stores. If you're lucky enough to live here in Nova Scotia, Canada... you can find it at the Halifax and Wolfville farmers markets on Saturday! Hope to see you there! Rawthentic Chocolate is sweetened with Blue Amber Agave Nectar... it is sweet, like you are used to... and our signature chocolate tastes like a nice dark chocolate, but not too dark. Adjusting the cacao is easy, and Rawthentic Chocolate can be made very dark. We have been told by some of our friends at the markets here that it is some of the best they've tried. And some of them claim to be dark chocolate connoisseurs! The Agave blends perfectly with the Raw Chocolate, which is heated to only about 105(F) degrees, and makes a 'guilt free' antioxidant Raw Chocolate that we think you'll love!
If you do like chocolate but are diabetic, your doctor may approve of you eating raw chocolate, you may want to try agave nectar which is low on the glycemic index... [more later, check for updates!]
Allergic to chocolate?
It is debatable that some are allergic to the processing and sugars in chocolate, rather than the Cacao bean itself. Although this type of chocolate is sometimes referred to as 'diabetic safe', Dabetics should check with their doctor if they are able to consume Raw Chocolate sweetened with Blue Amber Agave Nectar.
*Note: We have learned that chocolate of any kind is best kept away from dogs, as there is something in their brain that really does not like chocolate. We promote keeping our furry friends safe and away from all chocolate.
On a diet?
Raw chocolate may fit into your heathy eating plan, it certainly does ours! We like to call "guilt free"! As we said we love all chocolate, but you may be interested to know that there is delicious chocolate that is dairy and sugar free!
